I just thought I’d share my lunch meal prep for this week! I must say, this Mexican style cauliflower rice & chicken with salsa is pretty dang good!! Remember, meal prep isn’t one size fits all— what works for me may not work for you and that’s totally fine. It also doesn’t have to be a difficult or drawn out process! I cooked the cauliflower rice in the microwave and the green beans on the stove in my wok. The taco-seasoned chicken cooked in my crockpot while I slept! SO EASY!
