I hate when blogs have a whole life story before they get to the recipe, so I'll make this short!! My mom brought me 5 pounds of potatoes, and I thought what am I going to do with those? So I obviously made potato soup and I wanted to share the recipe with you.
A couple notes about the recipe: I always use more potatoes than the recipe calls for. I don't always peel my potatoes first, but I was just back in the hospital for another UC complication, soooo I had to take the time to peel the potatoes this week *eye roll*.
I also paired this soup with the bread machine (I say homemade) bread I posted yesterday - so good!
