I'm not sure if a HOT baked potato casserole is an appropriate summer BBQ dish, but it sure is good!
This recipe is adapted from The Diary of a Real Housewife, found on Pinterest.
8 russet potatoes
1/4 c butter
4-5 oz cream cheese
2/3 c all natural sour cream
1/2 c almond milk
1/2 tsp garlic powder
salt and pepper
2 c shredded sharp cheddar cheese
1 c cooked and crumbled bacon
1/4 c chopped chives
-Preheat oven to 375. Spray 9x13 pan with cooking spray
-Wash, peel, dice potatoes; bring to boil until tender
-While the potatoes are cooking, fry your bacon (or air fry!)
-Drain potatoes, place back in the empty pot
-Careful add butter, cream cheese, sour cream, milk
-Stir these - we aren't making mashed potatoes, so be careful not to crush all the diced potatoes
-Add garlic powder, salt, pepper, most of the shredded cheese, half of the bacon
-Pour into the 9x13 dish
-Sprinkle the remaining cheese and bacon on top
-Bake for 25 minutes
-Top with chives and serve!
(Mine is going to the fridge for a couple days then I'll reheat before the BBQ - just make sure to seal it tightly if you're going to use it for later)
